So, this happened the other day. This is a speech written by one of our friend’s 7 year old daughter for her class assignment.

It sure did make my day! The timing couldn't be more perfect… especially when the year is slowly coming to a close and when you tend to do the year end auditing of your life ;) This little nuggets of appreciation does keep me pumped up to continue doing what I’m doing.

This place is still here because of the generosity of so many wonderful people. People who continue to check out the site on a daily basis even though my posting frequency is not good as before, people who still don't mind taking the effort to read the recipe rather than see and hear it ;) and people who are willing to freely share their recipes, even their family heirloom recipes!

That reminds me… sometime ago when I came across a good dish, I asked the person for the recipe. The person was willing to give me the recipe on one condition: don't share the recipe on the blog. I said a polite thanks, but no thanks. Well, what’s the point of having something good if you can't share it with anyone, right?

Now, coming to our recipe. I got it from my friend Deepa. We had this as a starter at one of her dinner parties and we instantly liked it. She was more than happy to share the recipe and I should also tell you that she is one of the taste testers of my cooking experiments and she always takes time to give me detailed feedback. Thanks a lot dear :)

This is a good appetiser / snack for your party. It can be made ahead and it’s kinda healthy too. No frying involved and you can dress it up in many ways. Boiled and shredded chicken cooked in Indian masala is a different and interesting take on the regular pulled chicken.

Here you go… one amazing dish that can be eaten in many ways. You can serve it on it’s own or add some mayo and serve it on top of some cracker. You can also use this as a filling for quesadilla, sandwich or any rolls. I guess you can also use it as a stuffing for puff pastry.

Here is the recipe…

Clean the chicken breast (whole piece, no need to cut) and pat dry with kitchen towel. Marinate the chicken breast with chilli powder, turmeric powder and salt. Keep aside for 10 mins…

Add water to chicken pieces (water level should be 1-2 inches above the chicken pieces) and cook. Bring it to boil, reduce flame to lowest and cook till chicken becomes tender…

Drain the excess water. Let the chicken cool for 15 – 20 mins. Shred the cooked chicken breast using a fork or your hands…

Heat oil in a wide pan. Add chopped onion and capsicum strips. Cook till onion begins to brown and capsicum is soft…

Ingredients

  • 450-500 gms Boneless Chicken Breast
  • 2 tsp Chilli powder
  • 1/2 tsp Turmeric powder
  • 1 big Onion (chopped)
  • 1 small Capsicum (cut into strips)
  • 1 tbsp Crushed ginger & garlic
  • 1/2 -1 tsp Pepper powder
  • 3 tsp Coriander powder
  • 1 tsp Chicken masala (refer notes)
  • 1 tsp Soya sauce (optional)
  • 2 tbsp Chopped Coriander leaves
  • Salt
  • Oil ( I used coconut oil, you can use any oil of your choice)

Instructions

  • Serve with Pav, bread rolls, buttered toast or as a side dish for rice or chapathi or use as a filling for a sandwich or tortilla.

Notes

You can use any curry flavoured powder instead of chicken masala like noodle taste maker or any other masala powder.
You can also add curry leaves if you like.
Make sure you don't overcook the chicken breast, otherwise the dish becomes dry.
